For the Soup Base
  • 2 cups Sweet Potatoes
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 4 cups Vegetable Broth
For the Seasoning
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Cumin
  • ¼ teaspoon Red Pepper Flakes
For the Greens
  • 4 cups Kale chopped

Method
 

Cooking Steps
  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until translucent, about 5-7 minutes.
  3. Add garlic and cook for 1 minute, stirring constantly.
  4. Combine sweet potatoes, broth, salt, pepper, cumin, and red pepper flakes.
  5. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender, around 15-20 minutes.
  6. Stir in kale and cook for an additional 5 minutes.
  7. Blend for a smoother texture if desired.
  8. Serve hot in your favorite bowls.
