Ingredients

For the Oats Base
  • 2 cups Rolled Oats Use gluten-free oats if necessary.
  • 2 cups Coconut Milk Use canned or carton coconut milk, unsweetened preferred.
  • 1 tablespoon Chia Seeds Helps to thicken the oats.
  • 2 tablespoons Maple Syrup Adjust sweetness to taste.
  • 1 teaspoon Vanilla Extract For added flavor.
For the Toppings
  • 1 large Ripe Mango Peeled and diced.
  • ½ cup Shredded Coconut Unsweetened preferred.
  • ¼ cup Chopped Nuts Almonds or cashews work well.
  • 1 banana Sliced Banana Optional, for extra sweetness.

Method

Prepare the Oats Base
  1. In a mixing bowl, combine the rolled oats, coconut milk, chia seeds, maple syrup, and vanilla extract. Stir well until all ingredients are fully incorporated.
  2. Cover the bowl with plastic wrap or transfer the mixture into mason jars or containers. This will help the oats absorb the liquid and flavors overnight.
  3. Refrigerate the mixture for at least 4 hours or overnight. This allows the oats and chia seeds to soften and thicken.
Assemble and Serve
  1. Once the oats have set, remove them from the refrigerator. If the mixture is too thick, you can stir in a little more coconut milk to reach your desired consistency.
  2. Divide the oats into serving bowls or jars. Top each serving with diced mango, shredded coconut, chopped nuts, and sliced banana if desired.
  3. Serve immediately and enjoy your Tropical Mango Coconut Overnight Oats!
