- In a large skillet over medium heat, add the olive oil. Crumble in the Italian sausage and cook until browned, about 5-7 minutes.
- Add the minced garlic and baby spinach to the skillet. Sauté for about 2 minutes, until the garlic is fragrant and the spinach wilts.
- Stir in the diced tomatoes, cooking for another 5 minutes.
- Pour in the heavy cream and chicken broth. Let this simmer on low heat for about 5 minutes until it thickens slightly.
- Meanwhile, boil the penne pasta according to the package instructions until it’s al dente. Drain the pasta.
- Combine the drained pasta with the creamy sauce in the skillet. Toss to coat everything thoroughly.
- Dish out the Tuscan Sausage Pasta hot, and top it generously with freshly grated Parmesan cheese.
